It is high in fruits and vegetables, focuses on healthy fats, and incorporates whole grains into meals. I love the mediterranean style of eating because it doesn't promote restriction and focuses on incorporating more vegetables. Serve with my Greek Tomato and Cucumber Salad
Ingredients:
2-3 Boneless Skinless Chicken Breasts
2 Zucchinis
2 Yellow Squashes
1 Lemon
1 Red Onion
1 cup Cherry or Grape Tomatoes
3/4 cup Crumbled Feta Cheese
3 Cloves of Garlic
1/4 cup Olive Oil
1 1/2 Tbsp Balsamic Vinegar
1 Tbsp Oregano
Salt and Pepper to taste
Instructions:
Preheat oven to 400° F
Slice chicken breasts in half
Chop zucchini and squash into bite sized pieces
Cut red onion and lemon into wedges
Mince garlic
Whisk garlic, olive oil, balsamic, oregano, and salt and pepper together in small bowl
Place vegetables and lemon wedges in bottom of 13x9 dish and top with chicken
Pour sauce over vegetables and chicken
Bake in oven for 30 minutes (make sure chicken is no longer pink or reaches internal temperature of 165° F)
Remove from oven and add feta cheese
Bake 5 more minutes
Slice chicken and serve
